How do you know what key a song is written in?

If you are talking about finding the key to a song you're hearing on the radio, you need to know which notes are being used. If you have a guitar or a keyboard, you should be able to find the notes. Then whichever accidentals (sharps or flats) are being used will give you the key signature. That key signature will give you the major or minor key.
