I would like to start learning music
I recently purchased a couple of Yahama Keyboards, one of which is a PSS-470 and the other a PSR-11. My question is " On what instrument is it easier to learn on, Keyboard, Piano or Organ? or does it matter?

Since reading the notes and playing them are basically the same, it doesn't matter. If you are talking about a concert organ with multiple manuals then piano is definitely easier.

if you are just learning to read and play stick with the keyboard/piano. Organ is much more complex.

please tell me can I play violin sound with a keyboard?

On a keyboard all you will get is a "tweaked" sound no matter if you play it in piano mode, organ mode, or violin. All it is giving you is the same exact style of playing as a piano (same notes & all), just with different sounds.
