know of any great elementary choral pieces that have something to do with animals or one animal?

You might want to check the library. If you live in New York, the Donnell Library on 53rd st between 6th and 5th avenues had a great childrens section and the Librarians are a great help.

Also you might try the Library for the performing arts at Lincoln Center - the Librarians there are also very helpful.

If you live a in any big city I would start there with the library, if you are near a music conservatory, you could go to the school bookstore and ask whoever is working there to suggest something.

I know everyone suggest google, and I suppose you could give it a go.
