I would love to find a CD that has the same song first played by only a flute, then by only a violin, etc.

It would also be fun to find the same type of thing from a different country. So, for example a song from Japan using their native instruments whatever they are, one at a time.

This is going to be very hard to find, if not impossible. The need for such a style of recording is extremely small, therefor not profitable. Your best bet is to go online and try to find a song done in various forms, but different recording artists.
